Farmstead Butcher Expands With New Store at the Gettysburg Outlet Shoppes

Farmstead Butcher, the Gettysburg-based craft meat producer known for its heritage pork, handcrafted sausages, and pasture-raised meats, has opened a spacious new retail shop in the Gettysburg Outlet Mall. The store, located at 1863 Gettysburg Village Drive, Suite H890, sits behind the mall’s main street near the water tower, providing easy access and ample parking for local shoppers.

Owner Beau Ramsburg began his journey in local agriculture in 2007, when he and his family launched Rettland Farm, raising pasture-raised livestock and poultry and selling directly to consumers. But as interest in their products grew, the family ran into a problem: the region lacked reliable, small-scale meat processing services. Their long-standing passion for artisanal, craft-style meat production led them to build their own facility. “In the beginning we simply couldn’t find the processing we needed,” Beau said. “So we built it ourselves.”

That effort led to the creation of The Farmstead Butcher in 2017 on the Rettland Farm property. From the start, the shop became known for its motto, “Craft Meat and More!”—reflecting a commitment to traditional techniques, careful sourcing, and high-quality, deeply flavorful products. Today, those offerings include pork, beef, chicken, lamb, turkey, and smoked meats, all displayed in the new store’s expanded cases. The shop also carries bone broth, pasta, cheeses, and more.

Sustainability remains central to the Farmstead Butcher philosophy. The Ramsburg is committed to regenerative agriculture, soil health, clean water and air, and humane treatment of animals. Animals raised on Rettland Farm—or sourced from partner farms—must meet strict welfare standards, including no antibiotics or synthetic growth promoters, pasture-based production for ruminants and seasonal poultry, and housing with fresh air, sunlight, and deep bedding for pigs. These standards apply to all farms they source from, not just their own.

The new retail shop replaces a much smaller location that had become increasingly constrained as both retail and processing expanded. The outlet mall location gives the business nearly ten times the display space, with room for new products and a more comfortable shopping experience. “It’s been a good change for us,” Beau said. “A lot more room, a lot more display, a lot easier for people to get in and out.”

The expanded space allows the team to offer both grass-fed beef from Fairfield and grain-finished beef at a different flavor profile and price point. “People have different preferences, and now we can offer more for people to try,” Beau added.

Thanksgiving is bringing a brisk demand for turkeys—both those raised on Rettland Farm and more than 1,500 birds processed for other farms. Christmas specials will begin on Black Friday, including a local cheese tasting and handcrafted charcuterie boards branded with the Farmstead Butcher mark.

The retail team is led by full-time manager Kelly. Beau’s son, Turner Ramsburg, a high-school junior with an interest in culinary arts, works Saturdays and helps represent the business at two Washington, D.C., farmers markets. “People buy meat with their eyes,” Beau said. “You’re never going to have this kind of display at a farmers market.”
